If your grocery store has a deli section, pick up a container of your favorite side, or head to the produce section and grab what you need to make a delicious salad. Get some baby potatoes while you’re there—they’re small enough that they’ll cook in the same amount of time it will take to prepare the salmon. Toss them in oil, salt, and pepper, then roast them at 425 F for 20 to 25 minutes or until fork-tender. Garnish with fresh herbs or extra parmesan and dinner is done.
